Steps
- 1
Boil 1 big or 2 medium potatoes and mash with a masher or hands so that no lumps are there. Grind the semolina to a fine powder. Heat butter in a pan. Add minced garlic and saute till aromatic and light brown. It should not turn dark.

Add chili flakes and 1/2 cup of water. Boil and add 1/2 tsp salt. Add ground semolina powder and stir briskly till water is absorbed and there are no lumps. If needed, add some more water. Add Chaat Masala, Peri-Peri Masala and toss till the mix gets a dough-like consistency and leaves the sides of the pan.
- 3
Add boiled and mashed potato to this dough and toss. Set aside to cool. Add cornflour and knead till cornflour, potato and semolina are mixed thoroughly. Add 1 tbsp oil and chopped coriander. Knead again and set aside covered for 10 minutes. Divide dough into 3 balls. Dust some flour on a rolling board and roll out the ball into 1 cm thickness. With a cookie cutter cut into rounds.
