Quick and easy—this is a great way to switch up your usual scrambled eggs in the morning!
Cooking Instructions

These pods are green beans, in case you’re not familiar with them.

Trim both ends off the green beans, then cut them into small pieces. Boil them in water for about 5 minutes. Drain and set aside.

In a bowl, beat the three eggs with the onion, garlic, chopped green beans, and a pinch of salt. Mix well with a fork. Heat a little oil in a skillet, then add the egg mixture. Cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through.

Once ready, warm the tortillas and fill each with a little of the scrambled egg mixture.

I used lentils and spices as my meat substitute. We ate the whole thing! The lentils with added onions gave a look and texture of ground beef. I used spices while cooking the lentils to infuse flavor into them. Then used a boxed taco kit and the flavor packet to finish it off. Healthier and delicious. You really need to try this!
