This is a popular Bengali cuisine . I have prepared it in my style. It tastes good and can be tried with paratha, puri or rice. #SC4-
Steps

Fry urad dal bori in oil till golden brown. Keep it aside.

Remove the skin of potatoes and pumpkin. Cut into medium size pieces and keep them separate.

In a nonstick pan, add oil and heat it. Add mustard seed, fenugreek seed and fennel seed into the hot oil. When ready, add potato pieces into the pan and fry gently.

After few minutes of cooking, add pumpkin pieces and fry stirring occasionally. Otherwise, cover the pan with lid.

Add red chili, fried bori and chana saag into the pan. Mix gently. Add all the spices, mix well and add water. Cover the pan with lid.

Within 5 minutes, vegetables become soft and ready. Add amchur powder and switch off the burner. Transfer the curry into a serving bowl.
