Ingredients

  • 1medium-size butternut squash (about 2 cups chopped into bit size pieces)
  • 2 tbspoil
  • 1/4 tspmustard seeds
  • 1 tbspChana dal
  • 1/2 tspurad dal
  • 4green chili
  • 1 sprigcurry leaves
  • 1medium-size onion
  • 2 tbspgrated coconut
  • as requiredFew coriander leaves
  • to tasteSalt

Steps

20 minutes
  1. 1

    Peel the outer layer of butternut squash, scoop out the seeds and chop into bite size pieces.

    In a pan heat oil. Add in mustard seeds and let it splutter. Add in Chana dal, urad dal and sauté until dals are golden. Add in chopped onion, slit green chili, curry leaves and sauté until onions are translucent.

    Add in pumpkin cubes and mix well. Add salt, cover and cook until pumpkin is tender stirring in between. Add in splash of water if required.

    Once pumpkin is cooked add in grated coconut, stir and cook for 2 minutes. Finally add chopped coriander leaves.
