Ingredients

  • For idli
  • 1.5 cupsemolina/rava
  • 1 cupcurd
  • 1/2 tspbaking soda
  • 1 tspsalt
  • as required Water
  • For sambar
  • 1/4 cuptoor dal
  • 1/4 cupchopped pumpkin
  • 1/4 cupcarrot chopped
  • 1/4 cupchopped bottle gourd
  • 1medium brinjal chopped
  • 2 tbsptamarind pulp
  • 1 tspturmeric powder
  • to tasteSalt
  • 1 tspginger grated
  • 2 tbspsambhar masala
  • 1 tspkashmiri red Chilli powder
  • as requiredChopped coriander leaves
  • For tempering
  • 1 tspurad dal
  • 1/2 tspmustard seeds
  • as requiredFew curry leaves
  • 1 pinchasafoetida
  • 1 tbspoil

Steps

    In a mixing bowl take rava, add curd whisk well. Add 1/2 cup water mix again.cover and keep aside for 15-20 minutes.

    Soaked the dal into water for 30 minutes.wash and chopped all the vegetables. In a pressure cooker add soaked dal and all veggies.add turmeric powder and 1 tsp salt.add 2 cups water and pressure cook for 3 whistle.

    Open the cooker the dal and veggies has cooked perfectly.mash with ladle or masher.add all spices, tamarind pulp and sambhar masala. Mix all. if needed add some water. Cook it for 4-5 minutes.add chopped coriander leaves. Mix.and remove from gas keep aside.

    For preparing tadka add oil in tempering pan,when it heated add mustard seeds,urad dal,curry leaves and asafoetida.when they spluttered remove from heat. Add this tempering to freshly prepared sambhar. Now sambhar has ready so we start to make idli.

    Take idli batter add 1 tsp salt and baking soda.add some water mix again.pour the batter into greased idli mould.put the mould in microwave safe bowl.place this bowl in microwave and cook for 3 minutes. Prepare all idlis

    Serve the Idli with sambhar and coconut chutney.
