Ingredients

20 minutes
2 to 3 servings
  1. 2 cupsPeeled and cubed fresh cucumber
  2. 1 cupPeeled and cubed carrots
    Carrot Paratha (Gajar ka Paratha)
  3. 1/2 cupPeeled and cubed radish
    Radish Peels Raita
  4. 1/2 cupCubed apple
  5. 1/2 cupCubed pear
    Jaggery Caramel Pears
  6. 1/2 cupGreen capsicum cubed
  7. as required Crumbled fresh feta cheese as per liking
  8. 5 - 6Lettuce leaves
  9. 1 tablespoonLemon juice
  10. As tasteFresh or dried Italian herbs
  11. 1 tspOlive oil
  12. 2 tablespoonsLemon juice
  13. as per taste Salt, pepper
  14. 1 tablespoonHoney or less if you like
  15. As requiredFresh mint leaves and pomegranate pearls to garnish

Steps

20 minutes
  1. 1

    First, take a deep salad bowl. Mix in all the veggies and fruits, except feta cheese. Add 1 tbsp lemon juice and refrigerate for an hour.

    Then mix separately olive oil, rest of the lemon juice, seasonings, Salt, pepper and honey.

    Add this to the salad and gently turn it well. Then mix in small pieces of the feta cheese, garnish with mint leaves, pomegranate pearls and serve chilled. An excellent way to watch calories and enjoy food alongside.
