Sabudana Semiya Kheer is an easy and quick payasam recipe made with sago, semiya, milk, sugar, cardamom, saffron, and nuts.

Sabudana is soaked in water and cooked in milk along with roasted semiya. Sabudana can be soaked in hot water for 15 minutes in case of a shortage of time. I have used sugar as a sweetener. Other sweeteners that can be used are brown sugar, condensed milk, and jaggery. Saffron and cardamom are added for color and flavor. Roasted nuts are finally added to add crunch to the kheer.

Ingredients

30 minutes
4 persons
  • 1/4 cupsabudana
  • 1/4 cupsemiya, roasted
  • 2 cupsmilk + 1/2 cup water
  • 4 tbspsugar
  • Few saffron strands
  • 3cardamom, powdered
  • 1 tbspghee
  • 10cashews
  • 8badam
  • Few raisins

Steps

30 minutes
  1. 1

    Rinse and soak sabudana for 2 hours or overnight. In a pan take milk, and water and let it come to a boil. Take a ladle full of milk to soak saffron in a bowl.

    Add in sabudana pearls a few at a time stirring continuously. Add in roasted semiya stirring continuously to prevent them from sticking to each other. Cook for 6-8 minutes until sabudana and semiya is cooked well.

  3. 3

    Add in sugar and stir until it dissolves. Add in saffron milk and cardamom powder. Stir and cook for 2 minutes.

    Fry chopped nuts in ghee and add it to the kheer. Switch off the flame.

    Sabudana and Semiya kheer are ready to offer as Prasad.
