First, take a deep salad bowl. Mix in all the veggies and fruits, except feta cheese. Add 1 tbsp lemon juice and refrigerate for an hour.

Then mix separately olive oil, rest of the lemon juice, seasonings, Salt, pepper and honey.

Add this to the salad and gently turn it well. Then mix in small pieces of the feta cheese, garnish with mint leaves, pomegranate pearls and serve chilled. An excellent way to watch calories and enjoy food alongside.
