Boil potatoes. Peel off and cut into slices.

Take a bowl, add besan, washed green methi leaves, hing, red chili powder, chopped green chilies, ginger-garlic paste, salt, and mix well.

Now add water gradually to make batter to fry pakore.. Cobine well, make sure batter should be semi-thick in pouring constituency.

Lastly, add cooking soda, and mix well in one direction. Cover a lid, and keep aside for 5 minutes.

Heat oil on a medium flame. Add potato slices in batches, coat in methi besan batter, fry on a slow flame to make it crispy.

Fry all pakodes in the same manner. Sprinkle chat masala on all pakodas..

Serve hot and spicy aloo methi pakore with red garlic chutney and green coriander chutney with fried green chilies..
