Korean Cucumber Kimchi is a healthy spicy and crunchy salad .Made with flavour packed seasonings this salad is a great accompaniment with stir fries,fried rice,kababs,or any other meat dishes.The ingredients for cucumber kimchi include cucumber which forms the main ingredient in the recipe.While other vegetables like carrot,cabbage,onion ,garlic,and seasonings like chilli flakes,toasted sesame seeds ,vinegar,soya sauce ,salt and sugar are added to give it a spicy hot and sweet tangy taste.This recipe is ready within 30 minutes and tastes great when served chilled.

Smear salt to the vegetables and let it stand for 15 minutes in a glass bowl. Wash rinse and pat dry the vegetables. Mix the remaining ingredients together except for the toasted sesame seeds.

Mix soya sauce,vinegar,tomato ketchup, black salt,sugar and sesame oil in a bowl.Stir till sugar is dissolved.Mix this sauce in the vegetables alongwith toasted sesame seeds.Toss all with a spoon till the sauce is well coated in the vegetables. Give it a standing time of 30 minutes and serve chilled a delicious side dish for rice,kababs,stir fries,noodles etc.
