Inspired by the quick pulled pork recipe from @auntyeiko I decided to make mine in the microwave instead. Super easy and fast!! Marinade overnight and the flavours were delicious!

Cooking Instructions

Cut 400g of pork into 2 halves, lengthwise. Prick with fork all over.

Put pork into a ziplock bag and add in all marinade ingredients. Marinade overnight.

Place parchment paper in a microwaveable container, add pork (without marinade liquid) and cover with lid.

Microwave on medium (800W) for 4 minutes. Flip and microwave for another 3 minutes. Let cool and cook with residual heat. Slice and enjoy!

Done in the style of cuban pernil, this recipe takes a long time, but yields fantastic fall apart roast with loads of flavor. I recommend serving this with pinto beans simmered in ham stock and rosemary on the stove while this roasts in the oven.
