Egg and bacon asparagus salad

Separate the lettuce leaves and rinse and slice the asparagus in half lengthways

Place a medium saucepan over a medium heat, drizzle with oil and fry the bacon until cooked to your liking, turning occasionally

Remove the bacon from the pan and cut in bite sized pieces and set aside. In the same pan add the asparagus and cook for 1 minute, squeeze over the juice of half a lemon and toss the asparagus. Cook for 30 seconds more and remove from the pan

Meanwhile bring a small pan of water to the boil and cook the he eggs for 6 and a half minutes

Dress the salad leaves in a drizzle of vinegar and olive oil, add the bacon, asparagus and peeled soft boiled egg. Season with salt and pepper and enjoy
