Ingredients

2 people
  1. 1sliced/roasted eggplant (see my recipe)
  2. 1 CTaco Seasoned Lentils (see my recipe)
  3. 1.5 tblsvegan cream cheese
  4. 1/2 Cplant based veggie cheese
  5. 1 Ctomato sauce

Cooking Instructions

    Heat lentil taco filling - used microwave (pre made filling, pls see my recipe)

    Add the cream cheese and shredded cheese. Mix well.

  3. 3

    Place wax paper down in baking dish and fill with tomato sauce.

  4. 4

    Place about a tablespoon of taco/cheese mixture on roasted eggplant and roll up. Place rolled eggplant in baking dish with tomato sauce. Pour more tomato sauce over rolls and prinkle with cheese.

    Bake at 425 for 25 minutes. Don't forget too keep your eyes in it👀
