Ingredients

  1. 1large eggplant
  2. 1 1/2 tablespoonsmayonnaise (about 20 grams)
  3. 3 1/2 tablespoonscream cheese (about 50 grams)
  4. chopped parsley
  5. chopped cilantro
  6. 1chopped green onion
  7. 2 clovesgarlic
  8. vegetable oil for frying
  9. salt

    Slice the eggplant lengthwise into thin strips (about 1/8 inch wide). Place in a bowl and season well. Let it rest for 10-15 minutes.
