I love the taste of fried eggplant, especially when paired with fresh herbs and cheese. In the summer, my mother always makes these rolls, and I eat them with great appetite.

I love the taste of fried eggplant, especially when paired with fresh herbs and cheese. In the summer, my mother always makes these rolls, and I eat them with great appetite.
Cooking Instructions

Slice the eggplant lengthwise into thin strips (about 1/8 inch wide). Place in a bowl and season well. Let it rest for 10-15 minutes.

Prepare the filling. In a container, mix the mayonnaise, cream cheese (you can also use goat cheese or crumbled panela cheese), chopped herbs, and minced garlic.

Heat a skillet. Add the vegetable oil and fry the eggplant slices. When they are golden, place them on a plate with paper towels to remove the oil. Spread each slice with the filling and roll them up. Place on a plate and garnish with chopped herbs.
