You can eat asap by itself or store couple days in fridge (airtight). I use for lasagna, rolls, cut up in rice or salads. Sometimes just snack right out the fridge. I'm a crazy veggie lover like that 🤪

Cooking Instructions

Preheat oven to 400
- 2
Place wax paper on cooking sheet. Spray paper with oil. Place eggplant on sheet and spray again lightly. Add spices just by dashing each on each slice to your liking.

Bake for 30-35. This depends on thickness of cut and how you like them cooked. Keep you eyes on them 👀

Watched Julia Child make this in her video "How to Cook Vegetables" (which I highly recommend watching). I copied hers exactly. If you like eggplant this is delish. She steamed her eggplants whole. I did the same. She used lemon juice to finish hers; so did I. Next time I'm not going to use lemon because even though I love lemon, I like this dish better without it. The parsley I did like.
