You can eat asap by itself or store couple days in fridge (airtight). I use for lasagna, rolls, cut up in rice or salads. Sometimes just snack right out the fridge. I'm a crazy veggie lover like that 🤪

Roasted Eggplant

You can eat asap by itself or store couple days in fridge (airtight). I use for lasagna, rolls, cut up in rice or salads. Sometimes just snack right out the fridge. I'm a crazy veggie lover like that 🤪

Ingredients

  1. 1eggplant (sliced long way -top to bottom)
  2. Coconut Spray
  3. Dried thyme
  4. Garlic powder
  5. Onion powder
  6. Salt, pepper

Cooking Instructions

  1. 1

    Preheat oven to 400

  2. 2

    Place wax paper on cooking sheet. Spray paper with oil. Place eggplant on sheet and spray again lightly. Add spices just by dashing each on each slice to your liking.

  3. 3

    Bake for 30-35. This depends on thickness of cut and how you like them cooked. Keep you eyes on them 👀
