Ingredients

  1. 10chicken thighs, boneless and skinless, excess fat removed
  2. 2 teaspoonskosher salt
  3. 1 teaspoonground black pepper
  4. 1/2 cupall-purpose flour
  5. 3 tablespoonsolive oil
  6. 2 tablespoonsherbes de Provence
  7. 2lemons, cut in wedges
  8. 15-20 clovesgarlic (1 1/2 heads), peeled, halved, and germ removed (if any)
  9. 7-8medium-size shallots, peeled and halved
  10. 1/3 cupdry vermouth

Cooking Instructions

    Heat oven to 400 degrees.

    Season the chicken with salt and pepper in a large bowl. Put the flour in the bowl and lightly dredge the chicken in it.

    Swirl the oil in a large roasting pan, and place the floured chicken in it, shaking the pieces to remove excess flour. Season the chicken with the herbes de Provence.

    Arrange the shallots, garlic cloves and lemon wedges around the chicken, then add the vermouth to the pan. Cover with aluminum foil.

    Put the pan in the oven, and roast for 20 minutes, then remove foil and turn pieces upside down. Continue roasting uncovered for another 20 minutes, or until the meat cooked through.

    Serve in the pan or on a warmed platter, garnished with the thyme, if desired
