Ingredients

Serves 2 (about 2 cups)
  • 1 cupmakhana (fox nuts or lotus seeds) (about 25 grams)
  • 1 cupplain yogurt (about 240 grams)
  • 1/4 teaspoonroasted cumin powder
  • 1/4 teaspoonroasted red chili powder
  • 1/2 teaspoonblack salt
  • 1 tablespoonfinely chopped cilantro and green chili
  • Sendha namak (rock salt), to taste

    Turn on the stove and dry roast the makhana in a skillet until they are crisp. Let them cool, then coarsely crush them.

    In a large bowl, whisk the yogurt. Add roasted cumin powder, red chili powder, black salt, and sendha namak. Mix well, then add the coarsely crushed makhana and mix again. Add the chopped cilantro and green chili, and mix to combine.

    Transfer the prepared raita to a serving bowl. Garnish with some whole roasted makhana, cilantro, mint, and chopped green chili. Serve with your favorite meal.
