My daughter and her entire family had the flu. They were all miserable. So I decided to make something that would be light on their stomachs, warm, and comforting. It’s so easy it’s pathetic, but it reeeeally hit the spot! I made another pot of it this morning for another sickie and delivered it. She’s nearly eaten the whole pot. Something about chicken soup is medicinal.

Ingredients

20 minutes
4 big bowls
  1. 1-2large cans of chicken breast meat, undrained, depending on how much you’re making
  2. 6-10 cupswater or chicken broth
  3. 1-2 tbspchicken soup base or 3-6 chicken bullion cubes if using water
  4. Salt, onion and garlic powders, I go lightly
  5. 1/2-1whole bag egg noodles
  6. Tip: to richen the eye appeal of chicken soup, add a drop or 2 of yellow food color

Cooking Instructions

20 minutes
  1. 1

    Fill a pot with water and add everything but the noodles. Bring to a boil. Add noodles and allow to cook until tender. That’s it. SO GOOD!!

    FYI, these are the best egg noodles I’ve ever had, hands down.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
