Easy Rice Cooker Beef Stew (Japanese Style)

A low carb and hearty beef stew made in the rice cooker. I “dried” the beef on kitchen towels before marinading them as I wanted to eliminate the additional step of browning them on the pan. The stew turns out great, no overly gamey smell. Great for meal preps and busy nights! You can also add in potatoes, daikon or any greens.

Marinade beef overnight in a ziplock bag.

Mix all seasonings in a small bowl.

Chop onions into large chunks and lay at bottom of rice cooker. Add in Then add beef with 1/2 of seasoning mixture set to cook on brown rice mode for 90 mins.

After 45 mins, add eggplants carrots and shirataki noodles. Pour in remaining seasonings. And let cook till done!
