The word malaikari is basically broken down to ‘malai’ and ‘curry’. And ‘malai’ has got nothing to do with cream (which many think could be the reason, because of the creamy texture). “Malai’ comes from ‘ Malay’ or Malaysia. Chingri malaikari is a loved dish of most Bengalis. It is almost a mandatory dish in a wedding or any other celebration. Chingri malaikari can be made with tiger prawns or any other large prawns.

Firstly wash the prawns then add some turmeric powder, salt and some red chilli powder. Now coat them well with the prawns. Now heat a pan, add some oil & fry the prawns. Now keep them aside.

Now wash the pan once then add then some oil again after heating the pan. Then add all the khada masalas including cinnamon stick, green cardamom, dried red chillies and a bay leaf. Let them splutter for a while.

Then add grated onion, ginger-garlic paste and mix it well. Now fry the masalas for about a minute. Then add all the dry masalas like turmeric powder, red chilli powder, coriander powder, cumin powder, salt, garam masala powder and sugar.

Now mix everything well. Then add tomato paste in it and mix it. Now fry the masalas until oil starts releasing from the masalas.

Now once the masala gets fried, add fried prawns to it. Now mix it well with the masalas.

Now add the coconut milk in it and mix it. Now cover the pan and cook it on a low flame for about 7 to 8 mins.

Your Prawn Malai Curry is now ready to serve. I have served this delicious recipe with some peas pulao. You can serve it with any kind of naan or rice varient.
