In a pan, heat some oil and add mustard seeds, haldi add mashed potatoes, red chilli powder and salt. Mix everything well.

Add coriander leaves. Once done take off the heat and let it cool.

Now take a medium size mashed potatoes ball and flatten it out in your hand.

Prepare a besan batter by mixing besan, salt and haldi with some water in a bowl. Make the batter semi liquidy.

Half the cut pav place a potato ball in the middle and cover it with pav.

Dip the vada pav in a besan batter and fry until golden brown.

Serve with tomato ketchup.
