Chicken and pancetta pasta
Something tasty and easy for a mid week dinner.
Steps

Add a drop of olive oil to a pan.
Fry the red onion for a few mins,then add in the pancetta and fry until nearly brown then add your mushrooms and mix well.
Put in a mixture of Italian herbs either fresh or dried.
Season with a bit of salt(be careful not too much because of the pancetta) pepper.
Then add the garlic and cook for a few mins.
Once all cooked remove from the pan and set aside in a bowl. - 2
Add the diced chicken to the pan cook through then put in the peppers and the courgette and cook for a further 10 mins.
Once cooked add in the pancetta etc.
Mix well - 3
Cook the pasta and heat up the mascarpone sauce.
Once the pasta is cooked drain well return the pasta to the pot and mix in the mascarpone and then mix in all the other ingredients into to the pot.
Season to taste
You're now ready to eat.
