Masala dhokla is an easy and less oil dhokla recipe that can be prepared within minutes in regular steel glasses without much hassle. Ingredients

30 minutes
15 pieces
  • For Dhokla
  • 2 cupsrava
  • 1/4 tspcitric acid
  • 1/2 tspbaking soda/fruit salt
  • as neededSalt
  • 1 cup+¼ cupWater
  • For potato filling
  • 3 medium size boiled potatoes mashed
  • 1 tspoil
  • 1 tspmustard seeds
  • 1 tspcumin seeds
  • 1 tspasafoetida
  • 1 tbspginger chilli paste
  • 1 tspturmeric powder
  • 1 tspcoriander powder
  • 1 tspgaram masala
  • As per taste Salt
  • 1 tspsugar
  • 1 tbsplemon juice
  • For tadka
  • 1 tbspoil
  • 1 tspmustard seeds
  • 1 pinchasafoetida
  • Few curry leaves
  • 5Green chillies cut in to slit
  • 1 tbsppav bhaji masala

Steps

30 minutes
  1. 1

    In a mixing bowl, add Rava, water, salt, and citric acid. Mix well and rest the batter for 30 minutes.

  2. 2

    For the masala, in a pan add oil, cumin seeds, mustard seeds, and hing. Sauté it.
    Then add the ginger-chili paste. Now lower the flame, and add turmeric powder, and coriander powder.
    Then add boiled and mashed potatoes and salt. Mix well with the masala.
    Add garam masala, lemon juice, sugar, and some coriander leaves. Mix well.
    The potato masala is ready. Cooldown completely.

    Make 2 equal size rolls from potato masala.

    Now add some water and place a stand on the steamer.

  5. 5

    After 30 minutes, the dhokla batter is soaked properly. Add some water if the batter is thick. Then add baking soda to the batter and mix well.

  6. 6

    Add 1-2 ladles of batter into grease steel glass. Place the potatoes roll into the center and cover the roll with batter. Ready another glass in the same way.

  7. 7

    Place dhokla glass into a pre-heated steamer. Cover and steam dhokla for 12-15 minutes on medium-high flame.
    When dhokla is steamed properly, take it out and cool it down completely.

    Demould dhokla from glass and keep it aside.

    For tadka, heat oil in a pan, add mustard seeds, hing, curry leaves, pav bhaji masala, and some coriander leaves. mix well.

    Add dhokla roll into tadka and roll in it.

    Now cut dhokla into a ring and serve with tomato sauce and green chutney.
