Ingredients

40 minutes
Serves 10 servings
  • 3 cupsall-purpose flour (375 grams)
  • 1/2 cupplain whole milk yogurt (125 grams; you can also use soy or low-fat yogurt)
  • 1/2 cupsunflower oil (125 grams)
  • 1 1/4 cupsgrated pecorino cheese (125 grams)
  • 3eggs
  • 2/3 cupdiced cooked ham (100 grams; or sliced)
  • 1/3 cupmortadella (50 grams)
  • 1/3 cupsalami (50 grams)
  • 1ball low-moisture mozzarella cheese
  • 1/3 cupasiago or smoked mozzarella cheese (50 grams)
  • 1 packet baking powder for savory cakes (about 0.5 oz or 16 grams)
  • 1mix of fresh herbs (such as sage, rosemary, thyme, chives)
  • 1 pinchsalt (adjust to taste, especially if your deli meats are salty)

Steps

    Get all your ingredients ready. In a bowl, beat the eggs with a whisk, then add the sunflower oil.

    Add the yogurt and mix, then stir in the grated cheese.

    Mix with the whisk, add a pinch of salt, then gradually add the flour, mixing with your hands.

    Next, add the baking powder for savory cakes and mix. Finally, add all the diced deli meats, cheeses, and herbs (I skipped the herbs for the kids).

    Mix everything together. Grease a Bundt pan and sprinkle it with breadcrumbs, then pour in the batter.

    Smooth the top and bake at 350°F (180°C) for 35 minutes.

    Let it cool a bit before removing from the pan. It was a hit—dinner guaranteed!
