Ingredients

Serves 4 servings
  1. 17 oz (484 g)4 thick beef steaks
  2. 1 tablespoonvegetable oil
  3. 2 clovesgarlic, minced
  4. 1small onion, diced
  5. 1 cuprosé or white wine
  6. 4 1/4 cupswater or beef broth (1 liter)
  7. 1/3 cupcelery, cut into thin sticks
  8. 1carrot, cut into thin sticks
  9. 1/4green bell pepper, cut into thin strips
  10. 1/4red bell pepper, cut into strips
  11. 1orange sweet potato, cut into sticks
  12. 4 piecespumpkin or butternut squash
  13. 2 cupscabbage, cut into squares
  14. 1/4 teaspoonground black pepper
  15. 1 teaspoonsalt
  16. 1 teaspoonpaprika
  17. 1bay leaf
  18. 1/4 teaspoonground cumin
  19. 1 teaspoonfresh thyme
  20. 2 teaspoonschopped parsley
  21. 1 teaspoonchopped fresh oregano
  22. 1 tablespoonfresh basil, cut into thin strips

Steps

90 minutes
  1. 1

    Pat the beef dry with paper towels and cut into 4 pieces.

    In a large pot, heat the oil over medium heat and brown the beef on all sides.

    Add the garlic and onion, and sauté until golden.

    Pour in the wine and water or broth. Bring to a boil, then reduce the heat and simmer for 1 hour, until the beef is tender.

    Once the beef is tender, add the remaining ingredients. Increase the heat to bring to a boil, then reduce the heat and simmer for another 20 minutes.

    Let rest for a few minutes before serving.
