Ingredients

20 minutes
4 servings
  • 4 ozbasmati rice
  • 350 mlwarm water (12 fluid ozs)
  • 2 ozsliced peeled almonds
  • 2 ozsliced cashews
  • 4 ozraisins or sultanas (previously soaked in water)
  • 2 ozbutter
  • 3 ozgranulated sugar
  • 1/4 tspsaffron threads soaked in water
  • 4whole cloves
  • 6whole cardamom pods
  • 2tbsp milk
  • 1cinnamon stick

Steps

20 minutes
  1. 1

    Wash the rice in running water.

    Melt the butter in a pan.

    Add the rice into the pan and coat with melted butter. Sauté for 1-2
    minutes.

  2. 2

    Dissolve the sugar in the warm water and add to the rice.

    Add cinnamon stick, cloves, cardamom pods, milk and saffron water and saffron threads and allow to infuse as you bring it to the boil on a medium heat.

    This will take about 5 minutes.

  3. 3

    When boiling, add raisins and nuts (hold back a few nuts for
    garnish).

    Put the lid on the pan and simmer for approximately approximately 10 minutes until cooked. Garnish with the remaining nuts.

    Serve warm!
