Dad's twist on almond chicken. Serve with your choice of sides. I personally enjoy this recipe with vegetable stir fry noodles. This is one of a number of old restaurant recipes my father created back in the 80's. Recently discovered in old notebooks after his passing and recreated for posterity.
Dad's Sweet'n'Sour Almond Crusted Baked Chicken
Dad's twist on almond chicken. Serve with your choice of sides. I personally enjoy this recipe with vegetable stir fry noodles. This is one of a number of old restaurant recipes my father created back in the 80's. Recently discovered in old notebooks after his passing and recreated for posterity.

Alternative prep for Almonds. Buy the bag of sliced Almonds and smash them in the bag with a mallet.

Start preheating oven to 400 degrees. While the oven heats up, I prefer to flatten the chicken breasts with a meat tenderizer mallet to about 1/2 in thick. It helps to both tenderize the chicken and allows for a quicker cooking time.

Prepare a baking sheet. Mix the sauce and Almonds together into a large bowl. Place bread crumbs into a seperate large bowl.

Place a chicken breast into the sauce/almond bowl and thoroughly coat the chicken. Small spatula is helpful. Then place the coated chicken into the bread crumbs for the dry coating. Then place the finished chicken onto the baking sheet.

Set into the oven uncovered for approximately 30-40 minutes. Verify the chicken is properly cooked to temperature. While the chicken is cooking is a great time to cook any side dishes.

Serve on a plate with your choice of sides. Enjoy
