I was trying to make caramel as part of the peanut mousse recipe from @carocas but having never made caramel before, I didn’t quite get it right first time and ended up with a lump of sugar fused together with peanuts.

People actually loved them (probably because they were eating almost pure sugar) and suggested I shared, so here it is 😀

Ingredients

30 minutes
10 servings
  1. 1 cupunsalted penuts
  2. 1 cupgolden caster sugar
  3. 3-6 tbspwater

Cooking Instructions

    I halved the peanuts, but you could also just throw them in whole

  2. 2

    Add the sugar and water to a pan, cook on low heat until the sugar granules dissolve

  3. 3

    Turn the heat up and cook for a few more minutes making sure that it doesn’t caramelise (if it starts burning/going dark brown, its too long)

    Add the nuts to the mix and remove from the heat. The sugar should start going back to granules again

  5. 5

    Empty onto a silicon mat and allow to cool

    📝 This works by basically making sticky sugar and lettting it dry again. If you really want to make caramel instead then you have to just heat it longer until it actually caramelises. My mistake that resulted in this recipe was that I mistook the brown colour of the golden caster as a sign that it was caramelising when it wasn’t. When I tired again with white sugar it was much more obvious (see the video)
