Courgette spaghetti in cream sauce - gluten free, spiralized veg

I was inspired by @samm spaghetti recipe so made a new version that was gluten free and used spiralized courgette in place of the traditional spaghetti. Give it a go.

I was inspired by @samm spaghetti recipe so made a new version that was gluten free and used spiralized courgette in place of the traditional spaghetti. Give it a go.
Steps

Finely slice your onion and garlic and add to a frying pan. Cook with a little oil until the onion starts to golden and sweeten.

As onion slowly cooks. Peel all 4 courgettes. Put 2 aside to make the fresh spaghetti.

Chop up 2 courgettes and add to the pan with the onion and cook. Season well with salt and pepper.

As the courgettes soften and cook, prepare the spaghetti. Using a spiralizing machine make spaghetti from your remaining 2 courgettes.

Once courgettes in the pan are cooked add the double cream and cook for 2-3 minutes.

Once the sauce is ready add your raw spiralized courgette spaghetti and gently mix it into your hot sauce. The heat from the sauce will gently cook the raw courgettes to give them an Al dente texture, keeping the spaghetti shape and not breaking apart. Serve and enjoy.
