Steps

First heat a pan with oil, add mustard seeds, let them crackle then add curry leaves, onion and cook on low to medium heat until it gets nice pink colour.

Add ginger garlic paste and stir for few seconds. Add turmeric powder, red chilli powder, coriander powder and stir. Add chopped tomatoes and salt, mix well and cook until tomatoes gets soft and mushy.

Add sugar and boiled peanuts, mix well and cook for few minutes on low flame.

Add as required water to adjust the consistency of gravy. (Depends the thickness of gravy as you want) and cook for few more minutes.

In last add garam masala powder, fresh coriander, and lemon juice. Mix well and switch off the flame.

Peanut curry is ready, serve with roti or plain parantha it tastes delicious.
