Spicy Shrimps Paste Dip, Nam Prik Kapi is the most famous of all the Thai chili sauces, made with fermented shrimp paste, chilies, and lime juice. This recipe is easy to make, and mostly just requires pounding and mixing up all the ingredients.

Flatten the shrimp paste, and then roast it over hot charcoal or roast on the heat pan (easy way I do 😊), just for about a minute on either side. Roasting the shrimp paste is not really about cooking it, but it’s bring out the fragrance and make it better smelling and tasting.

Pound garlic, shallots and 40 bird’s eye chilies, not very finely (not big chunks). Add shrimp paste, eggplants and palm sugar, gentle pound. The last step add lime juice, stir to mix well. Mix everything thoroughly, it should be saucy in texture, not too thin, and not too sticky or thick. After the add 10 bird’s eye chilies for garnish.

To makes a wonderful condiment to eat with a full meal of meal of vegetables such as cucumber, Thai eggplants, long bean or water morning glory, hot steamed rice, and fried fish.
