Ingredients

40 minutes
6 servings
  1. 1/4 cupolive oil
  2. 1zucchini, chopped
  3. 1/4 cupcarrots, chopped
  4. 2bell peppers, chopped
  5. 15cherry tomatoes
  6. 15black olives
  7. 1Tb. minced garlic
  8. 4green onions, chopped
  9. 2 tsp.dried oregano
  10. 2 tsp.dried thyme
  11. salt and pepper, to taste
  12. 2bay leaves
  13. 1 (4 ounce)package of crumbled feta cheese

Steps

40 minutes
  1. 1

    Preheat oven to 400°F and grease the sheet pan.

  2. 2

    Chop up zucchini, carrots, bell peppers and green onions and put in sheet pan. Season with garlic, oregano, thyme, bay leaves, salt and pepper. Drizzle olive oil over veggies.

    Bake in preheated oven for about 25-35 minutes. Remove from oven and distribute feta, then bake until feta is melted, 5-10 minutes.
