Prep all ingredients as shown below (pics). For seasonings, start adding only 2 1/2 packets of maggie curry seasoning first. Adjust or add more only if needed.

Place enough water in a pot and bring water to a boil. Soak noodles in hot water until AL-DANTE. Remove and drain water. Heat enough oil (4 tbsp or more) in a wok. Sauté chopped chilies (if using) and sliced onions until translucent. Push onions to the side of the pan, add eggs and scramble until almost set.

Stir in leafty greens and mix well.

Next, add noodles and its curry flavour seasoning. Over medium heat, cook noodles for only a few minutes and everything is well-combined. Taste and add extra curry flavour seasoning as needed.

Serve immediately.
