Ingredients

1 hr (min) - including marinading time
2-3 people
  1. 1 kgchicken thighs
  2. 2 tbspfresh lime juice
  3. 1 tbsprapeseed oil
  4. 2 tbsplight soy sauce
  5. 1/2 tbspVietnamese fish sauce (use a little less if using Thai fish sauce as it’s stronger)
  6. 2 tbspsoft brown sugar
  7. 2-3 clovescrushed garlic
  8. 1large knob ginger finely grated
  9. 1hot fresh chilli finely chopped (or use maybe a tsp chilli flakes)
  10. 1 tbspchopped coriander
  11. 1 tbspfresh coriander finely chopped, stalks included

Steps

1 hr (min) - including marinading time

    Put the chicken thighs in a bowl or bag and add all the marinade ingredients. Mix everything together and leave for at least 30 minutes to infuse.

    When ready to cook, bring the bbq (I used gas) up to 200 degrees c. Add the chicken thighs, cook on one side for 7 minutes, then flip and cook on the other side. Remove from the heat and allow to rest before serving.

    No pressure to use a bbq. You could use a grill pan too. Just bring the pan up to a medium heat and do the same. Just double check the chicken is cooked before eating as temperatures / cooking time may vary between bbq and pan.

    In the end I used my chicken as part of a Vietnamese style banh xeo.
