Eggless Mawa Cake

Traditionally parsi mawa cake is prepared using eggs but I have made it eggless and it tastes equally good. It is a type of cake but it tastes just as any traditional Indian sweet as it is prepared using condensed milk, mawa and flavoured with cardamom powder. It is a perfect recipe to try out this Raksha bandhan.

Take a bowl and add room temperature butter and powdered sugar to it. Whisk it until light and fluffy. Now add condensed milk to it and give it a good mix. Add grated mawa to it and whisk it for 2 minutes.

Now add vanilla essence and milk to the mixture and whisk again. Put a sieve over the bowl and add all-purpose flour, baking powder and baking soda to it and sieve everything together into the wet mixture. Now fold the mixture using a spatula. Add cardamom powder and mix it well, do not over mix.

Line a cupcake tin with cupcake liners. Add the mixture into the cupcake tin in equal portions. Add a piece of cashew nut on top of each cake. Now bake it at 180 degrees in a preheated oven for 12 to 14 minutes or until golden brown from top. Let it cool down for 10 to 15 minutes.

Store it in an airtight container. These can be even packed as gifts during the festive season.
