Vegetable, Meat, and Orzo Soup with Zucchini and Country Sausage

(Orzo is a type of pasta shaped like flat rice grains, commonly used in salads, rice dishes, and soups.)
This Orzo pasta soup is a side dish for the main course of Beef Souvlaki.
I wanted to minimize the workload while ensuring a balanced nutrition, so I combined vegetables (zucchini, carrots, celery root, onions, garlic, etc.), country sausage, and Orzo pasta into a hearty soup. It's great served hot or cold.

First, soak the Orzo in water for 10-15 minutes.

1. Slice the white onions, carrots, celery root, garlic, and country sausage as shown in the picture.
2. Dice the zucchini. - 3
Over medium heat, lightly fry the country sausage until the edges are light brown, then remove.

Without washing the pan, add the minced garlic, onions, carrots, and celery root. Sauté until the onions are fragrant and light brown (about 5-6 minutes).

Make a space in the middle of the pan, add a bit more oil, and stir in 3 tablespoons of tomato paste and 1/4 teaspoon of sugar. Continue to sauté for 1-2 minutes.

Transfer to a soup pot (or continue in the same pan), and add enough boiling water.

1. Once boiling, add the Orzo (stir while adding to prevent sticking).
2. Simmer on low heat for about 20 minutes, stirring occasionally. - 8
Add 2 teaspoons of Parmesan cheese.

Add the zucchini and continue to cook for 10 minutes.

1. Finally, add the country sausage and cook for 1 minute.
