Ingredients

  • 16 ozAny mix of Dried fruit
  • in this case Sultanas, currants & raisins
  • 8fluid oz water
  • 1 tspbicarbonate of soda
  • 4 tbsbrown sugar
  • 1 tspmixed spice
  • 2 ozbutter
  • 8 ozsr flour
  • 2eggs
  • sugar water for a glaze (optional)

Steps

  1. 1

    Place fruit, sugar, bicarbonate of soda, spice, fat & water in pan. Bring to the boil. Simmer for 5 mins. Remove from heat & leave to cool. Stir in eggs & flour. Cook for 1 to 1 and a half hours at 180 degrees, fan oven.

  2. 2

    When removed brush on glaze.
