Start with the onion. Slice it into half-moons, then cook it with a little olive oil and the brown sugar over low heat, stirring occasionally, until lightly caramelized, about 30 minutes.

Next, briefly run the rusks or toast under water to soften, sprinkle with salt, drizzle with a little olive oil, and place them on the bottom of your serving dish.

Cut all the vegetables into small cubes, slice the cucumber into rounds, and arrange them over the rusks. Sprinkle with dried oregano. Add the caramelized onions on top. Garnish with fresh oregano for extra aroma and freshness. Finish with a drizzle of olive oil and salt to taste.
