Soak Sabundaana overnight.

Drain all the water from Sabundaana.

Add boiled potatoes to a bowl and mash them well.

Add drained Sabundaana, salt, red chili powder, garam masala, coriander leaves, chopped green chili, and amchoor powder. Mix everything well.

With wet hands make round cutlets.

Heat oil in a pan. You can either deep fry or shallow fry these cutlets. You can use an air fryer as well.

Serve hot with ketchup, mayo or mint chutney.
