Portuguese-Style Chicken Breast and Thighs

I'm a fan of chicken, but sometimes I get bored of making the same thing over and over. One day, I remembered this chicken dish my mom and grandma used to make and thought... why didn't I think of it sooner! I hadn't eaten it in years, and it's truly delicious. The best part is that it practically cooks itself. Just sear the chicken and then put everything in the pot until the magic happens. It's one of those recipes that can cook while I'm working, which is fantastic. I didn't have their original recipe, but I was inspired by @MonicaGuzman's recipe with some modifications.

Cooking Instructions

Grease a pan with a little cooking spray and sear the chicken just until it changes color.

With a little more oil in a pot, sauté the onion, garlic, and bell pepper.

Add the chicken, then the tomatoes, wine, water, salt to taste, bay leaves, and oregano. I used a leftover sparkling white wine, but any dry white wine will do. Cover and cook for about 30 minutes or until the chicken is done.

Add the peas and serve.
