One day, I remembered this chicken dish my mom and grandma used to make and thought... why didn't I think of it sooner! I hadn't eaten it in years, and it's truly delicious. The best part is that it practically cooks itself. Just sear the chicken and then put everything in the pot until the magic happens. It's one of those recipes that can cook while I'm working, which is fantastic. I didn't have their original recipe, but I was inspired by @MonicaGuzman's recipe with some modifications.

Ingredients

4 servings
  1. 1chicken breast with skin
  2. 2thighs and drumsticks with skin
  3. 2onions, thickly sliced
  4. 1/2bell pepper, thickly sliced
  5. 1 clovegarlic, minced
  6. salt to taste
  7. 2bay leaves
  8. oregano to taste
  9. 1 cupwater
  10. 1/2 cupwhite wine (can be replaced with more water)
  11. 1small can of peas
  12. 1 cuppassata or crushed tomatoes
  13. as neededcooking spray

Cooking Instructions

    Grease a pan with a little cooking spray and sear the chicken just until it changes color.

    With a little more oil in a pot, sauté the onion, garlic, and bell pepper.

    Add the chicken, then the tomatoes, wine, water, salt to taste, bay leaves, and oregano. I used a leftover sparkling white wine, but any dry white wine will do. Cover and cook for about 30 minutes or until the chicken is done.
