A simple, budget-friendly, original, and flavorful summer recipe!

Brush a pie dish with olive oil and season it.

Slice the zucchini into rounds and arrange them in a circular pattern in the dish.

Season again.

Add the tomato sauce. I like to mix homemade tomato sauce with 2 tablespoons of spicy pasta sauce to give it a kick.

Roll out the homemade pie crust (or use store-bought).

Place the crust over the zucchini and bake for 45 minutes at 375°F (190°C).

Invert onto a plate to serve.
