Ingredients

Serves 5 servings
  1. 2.2 lbscooked and chopped beef head (about 1 kg)
  2. 1whole beef tongue, cleaned, cooked, and sliced
  3. as neededcorn tortillas
  4. 1medium onion, finely chopped
  5. 1 bunchcilantro, cleaned, disinfected, and finely chopped
  6. as neededlimes, halved
  7. your favorite salsa, to taste
  8. salt, to taste

    Make sure all your ingredients are ready before you start cooking. Place a large pot on the stove, add water, and set a rack inside for steaming.

    Place the chopped beef head and sliced tongue on the rack. Cover with a plastic bag, making sure the bag stays inside the pot to prevent burning.

    Cover the pot with a lid and steam for 30 minutes. Cut the limes and set aside. Take the cilantro, remove the roots, finely chop it, and place in a bowl.

    Take the onion, remove the stem, root, and first layer, cut in half, and finely chop. Set aside in a bowl. Check the meat, then carefully remove the lid and plastic bag to avoid steam burns. Take a warm tortilla, add a slice of tongue to one, and a good portion of beef head to another.

    Top with onion, cilantro, your favorite salsa, lime juice, and a pinch of salt. Enjoy with a refreshing glass of tepache!
