For me, bell peppers are the vegetable that best represents summer, and they’re always on my table. This time, I decided to stuff them with tuna for a tasty and flavorful main dish.

Wash the bell peppers, remove the seeds and inner membranes, and cut them in half lengthwise.

In a bowl, mix the tuna with the capers, chopped olives, anchovy fillets, and cherry tomatoes cut into small pieces.

Add the chopped basil and parsley, then season with salt, black pepper, and red pepper flakes.

Mix in the bread soaked in milk and squeezed dry, the bread crumbs, grated cheese, and minced garlic.

Fill the bell pepper halves with the prepared mixture.

Pour the olive oil into a baking dish, add the stuffed peppers, and bake at 400°F (200°C) for about 45 minutes.
