Ingredients

1 hour
2 people
  • 2onions (sliced)
  • 1/2 tablespoonsoil
  • 4-6 clovesgarlic (crushed or sliced)
  • 3medium potatoes (sliced or quartered)
  • 1 tintomatoes (ideally whole and then chopped)
  • 1 sprig fresh or dried thyme
  • 1bay leaf
  • 1small sprig fresh Rosemary
  • 2 1/2 cupsveg stock (tomato based)
  • 1 tspPaprika
  • Cornflour slurry (1/2tsp of cornflour mixed with water) to thicken if required
  • Salt and pepper to season
  • Optional lemon thyme, lemon zest, drizzle of olive oil and/or chopped parsley

Steps

1 hour
  1. 1

    Using a large pot, heat the oil and gently sauté the onion and garlic. Add the potatoes, hard herbs and paprika and cook gently until the potatoes start to colour and onions are soft.

    Add the tomatoes and stock and simmer gently until the potatoes are soft.

    Add the cornflour slurry (optional for a thicker soup) and simmer gently. Season to taste.

  4. 4

    Serve in bowls. Garnish with Thyme and:/or optional toppings. Nice with garlic bread or sourdough and cold vegan butter.

Amazing recipe to use up potatoes! 🥔 I don't know why that much potatoes are wasted while almost everyone on earth loves them! Hopefully all those beautiful recipes can inspire everyone to consume more and more potatoes 😊
