Take a Handi add oil, onion paste and stir fry.

Then add tomato paste, all dry spices and bhonify together.

Then add potatoes and bhonify together until the oil separates. Then add eggplant (long cut or small pieces it's your choice) and bhonify together for 5 minutes.

After bhonify add 1 cup of water in low heat for 20 minutes.

After 20 minutes when oil come up and vegetables is soft turn of the flame.

Bengan Aloo is ready to serve hot with peas Pulao or roti.
