Steps

Grate boiled potatoes. Make bread crumbs and mix in potatoes. Add salt and mix well.

Make a dough by kneading the potato mixture. Divide the dough in 4 equal parts. Make tikkis with the help of your palms. Keep aside.

In a pressure cooker add soaked chana. Add cloves, bay leaves, cinnamom stick and big cardamom. Mix salt and add water and pressure cook till 7-8 whistles.

Peel, Wash and chop onion, tomato, ginger, garlic and green chilli and grind to a fine paste. Heat oil in a wok. Add cumin seeds and when cumin seeds splutter add asafoetida and put grinded paste and saute till oil leaves the sides.

Add salt, red chilli powder, turmeric powder, coriander seeds powder and kasuri methi and mix well. Saute for 30 seconds.

Now add this prepared masala in the cooker in which chana is boiled. Mix well and place the lid and cook till 2 whistles and switch off the flame. Let pressure releases automatically.

Open the lid and add chopped coriander leaves, garam masala and chana masala and mix. Keep it aside.

Now for preparing tikki heat a griddle. Add cooking oil and put tikkis on it and shallow fry till crispie golden brown colour. Flip the side and fry from other side also.

Arrange 2 tikkis on a serving plate. Add 2 ladles full of chana. Add imli sounth and mint and tomato chutney. Arrange onion rings over it.

Sprinkle chaat masala and serve immediately.
