My Style Madrid-Style Cocido 😊 My Style Madrid-Style Cocido 😊
We're making cocido again, but today with a few changes. The soup turned out delicious, and adding the sautéed garlic, olive oil, and paprika to the potatoes and cabbage takes it to the next level. If you haven't tried it this way before, I highly recommend it!Give it some love and time to make it perfect, and enjoy—it’s almost the end of cocido season (though I’ll admit, I’ve eaten it in August with the air conditioning on 🤣🤣).Happy Friday and keep on cooking! 💃💃💃 Cocina con BarbaraTranslated from Cookpad Spain -

A nice cocido is starting to sound good, right? You can serve it with pickled peppers and scallions, or with a tomato and cumin dressing that's very typical in Madrid (I'll add that too), and you can also add the famous Madrid-style meatball (La bola), which is prepared in a separate recipe. Vegan Cocido Madrileño Vegan Cocido Madrileño
Who says you can't enjoy cocido in the summer? This Madrid-style stew has all the flavor, even without meat. I like to add extra chickpeas because I fry the leftovers the next day. You can make this without a pressure cooker; just increase the cooking time to about 2 hours. The more vegetables you add, the better. I usually include the green part of the leeks. With these vegetables, you can make homemade vegetable bouillon cubes for when you need vegetable broth and don't have any on hand. You can find the bouillon cube recipe on my profile. Spanish Meatballs in Sauce Spanish Meatballs in Sauce
In Spain, this dish was introduced by the Arabs. The word “Al-bunduqa” means “hazelnut” and refers to the shape of the little balls, which is how they got their name. Today, they’re much larger than hazelnuts, but that’s only because living standards have improved a lot since the Middle Ages. There are many ways to make them, even varying the types of ingredients—there are versions with different meats, fish, or vegetables. Juan CannasTranslated from Cookpad Spain -
