16 empanadas
  • Ingredients for the filling
  • 1.1 lbscooked turkey, cut into small cubes (about 500 grams)
  • 1 tablespoonolive oil
  • 1.1 lbsonion, diced (about 500 grams)
  • 3 clovesgarlic, minced
  • 1/3 cupgreen bell pepper, diced (about 50 grams)
  • 1/3 cuporange bell pepper, diced (about 50 grams)
  • 1/3 cupred bell pepper, diced (about 50 grams)
  • 1 teaspoonpaprika
  • 1/2 teaspoonground cumin
  • 1/4 teaspoonblack pepper
  • 1/2 teaspoonsalt
  • 1 teaspoondried oregano
  • 1 teaspoonfresh thyme leaves
  • 1 tablespoonchopped parsley
  • 1large fresh tomato, diced
  • 1/2-1 cuptomato sauce (120 to 240 ml)
  • Ingredients for the dough
  • 2.2 lbsall-purpose flour (about 6 2/3 cups or 1 kg)
  • 9.2 ozsalted butter, cut into small pieces (about 260 grams)
  • 1 1/8 cupssalted turkey broth (about 265 ml)
  • 1/2 teaspoonsalt
  • 2 teaspoonsvinegar
  • 1/4 cupwhite wine (60 ml)
  • 1beaten egg
  • Other ingredients
  • 2hard-boiled eggs, cut into 8 pieces each
  • 16olives of your choice
  • 1beaten egg

    FILLING PREPARATION
    Remove the skin, fat, and bones from the turkey. Place it in a pot, cover with water, and add 1 teaspoon of salt. Cook until tender. Reserve the cooking liquid. Let cool, then cut the turkey into small cubes.

    Heat a skillet with olive oil and sauté the garlic and onion together.

    Add the bell peppers and sauté.

    Add the spices and turkey, and cook for 2 minutes, being careful not to burn the spices.

    Add the tomatoes and tomato sauce. Heat thoroughly, add a little more salt if needed, and let cool.

    DOUGH PREPARATION
    In a bowl, mix the turkey broth with salt, white wine, vinegar, and the beaten egg.

    In a large bowl, add the flour. Using your fingers, work the butter into the flour until it forms small crumbs.

  8. 8

    Add the turkey broth mixture, mix, and knead until a ball forms. Chill in the refrigerator for about 1 hour, but don't let it get too hard.

    Divide the dough into 16 balls, about 100 grams each.

  10. 10

    Roll out each ball with a rolling pin to form disks about 6 inches (15 cm) in diameter.

    FILLING THE EMPANADAS
    Place the dough disks on the table.
    Spoon the filling into the center of each disk.

  12. 12

    Add a piece of hard-boiled egg and an olive to each disk.

  13. 13

    Brush a little water around the edges of the disks.

  14. 14

    Fold the disks in half to form a half-moon shape.
    Fold the sides to seal, forming an envelope shape.

  15. 15

    Brush the tops of the empanadas with beaten egg.

  16. 16

    Preheat the oven to 450°F (232°C).
    Bake the empanadas for about 25 minutes or until golden brown.
