Lebanese style Mutton meat with veggies

My brother-in-law cooked us this dish for linch today. When he cooks, he doesn’t like anyone to jump in “for help”, so I was just standing there watching and taking photos so I can share the recipe here 😊
He’s very picky when it comes to meat that he always goes to the same butcher that he trusts only. He tells him how he wants to cook it and the butcher tells him which cut is best for that dish! Here we used loin. You can use any parts from the back of the sheep which tends to be more tender than the other parts.

Cut the fat into small pieces. Add it to a big pan/tray and cook it on medium heat until it melts a bit. (High heat might burn it quickly)

Add the garlic and onion. Stir for 2minutes then add the other veggies to the tray. Stir until slightly soft

Add the meat. Mix and continue to cook on medium. High heat will make the meat too dry, and low heat will lead to release all the juice from the meat and it’ll end up too chewy.

When the meat is slightly brown, add the spices. Cook for around 10 minutes. When the meat is more brownish, add the salt. Simmer for 5 minutes and that’s it!

Serve with flatbread and hummus on the side.
