Peel and mash boiled potatoes. Keep aside.

In a deep bottom pan, heat mustard oil till it smokes. Turn off the flame.

Add chopped onions and green chillies and saute for 2 minutes.

Add mashed potatoes, salt and red chilli powder. Mix well.

Once the flavours start mixing, and the oil begins to leave the side, add chopped coriander leaves.

Aloo Chokha is ready to serve. Serve hot with lithi, chapati, pav or parantha.
